Line Cook
We are looking to hire strong Line Cook for the 2026 Summer season (and beyond!)
At The Pheasant and Baleine, we pride ourselves in gracious and hospitable service - what we refer to as "casual excellence." The ideal candidate is interested in gaining experience as a cook, working under an incredibly talented executive chef who is eager to teach and help individuals develop toward their professional goals in the kitchen. Line Cook Responsibilities:
• Full support of the Executive Chef and Sous Chef during daily culinary operations, with a focus on consistency and quality within existing guidelines.
• Maintain recipes, portion specifications, and standard preparation procedures for all dishes and ensure that team members are following these standards consistently.
• Lead and cook by example and provide guidance to other team members.
• Ensure kitchen operations can run smoothly and efficiently at all times, including in your absence.
• Observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and back of house overall appearance.
• Maintain complete knowledge of and compliance with all company policies, as well as service procedures/standards.f
• Contribute to continuing education for back of house staff, covering knife skills, BOH knowledge, operations skills, and health and sanitation guidelines.
• Ensure thorough and efficient kitchen set-up, cleaning, and care of facilities, working with the management team across all departments.
• Other duties as assigned.
Lead Bartender
We’re looking for an experienced Lead Bartender to help steward our bar program, mentor the team, and set the tone behind the bar—especially during high-volume summer months.
This role is hands-on and service-driven, ideal for someone who loves being behind the bar, cares deeply about guest experience, and enjoys helping a team operate at a high level.
Key Responsibilities
Lead service behind the bar during shifts, setting the pace, tone, and standards
Execute Baleine’s cocktail, wine, and beer program with consistency and care
Support training and onboarding of bartenders and barbacks
Maintain bar organization, cleanliness, and mise en place
Assist with inventory management, ordering, and minimizing waste
Collaborate with ownership on seasonal cocktails, menu updates, and specials
Uphold responsible alcohol service and all local/state regulations
Be a calm, professional presence during busy services
What We’re Looking For
3+ years of bartending experience in a quality-driven bar or restaurant
Strong cocktail fundamentals and solid wine knowledge (or genuine curiosity)
Natural leadership skills—leads by example, not ego
Excellent communication and teamwork
Ability to thrive in a fast-paced, high-volume environment
Organized, reliable, and detail-oriented
Available nights, weekends, and peak seasonal shifts
Bonus (Not Required)
Experience with inventory systems or bar costing
Interest in natural wine or classic-leaning cocktails
Prior lead bartender or bar supervisor experience
